Momo’s Smoked Ribs
Ingredients
1 ½ cup Momo’s Michelada mix
1 Pork loin baby back ribs
2 tbsp brown sugar
6-8 tbsp unsalted butter
Salt Lick Original BBQ Rub
Lime
Apple cider vinegar / apple juice
For Serving
Jalapeño
Cilantro
Directions
Pat the rack of ribs dry with papers towels, then cut into individual ribs.
Place ribs in a large mixing bowl, use a splash of Momo’s as the binder, then season generously. Mix until evenly coated.
Preheat smoker to 275 degrees. Once hot place the ribs directly on the grates. Spray every 30-45 minutes with an apple cider vinegar and water mixture. Cook ribs for 2 hours.
After 2 hours remove the ribs from a smoker and place in a disposable aluminum pan. Cover with juice of one lime, sprinkle brown sugar on top, add butter, then pour a little over a cup of Momo’s evenly over the ribs. Cover with aluminum foil and return to the smoker.
Smoke for 45 minutes to an hour. Remove foil and cook for another 10 minutes. Remove the ribs from the smoker and let rest for 10 minutes. Going to be hard to wait that long!
Garnish with cilantro, jalapeños, jalapeño sour cream and enjoy!
