What better way to free up more time in your day for Summer fun than making dinner in the slow cooker!
SLOW COOKER BEEF TACOS
(Need a slow cooker/crockpot for this one)
Ingredients
2-3 lb boneless chuck roast
Taco Seasoning mix (or come up with your own)
3-4 oz tomato paste
¾ cup beef broth
1 cup Momo’s Michelada mix
1 lime
½ red onionÂ
For serving
Flour Tortillas
Pico de Gallo
Directions
Prep your sauce by combining Momo’s, beef broth and tomato paste in a bowl and whisk.Â
Place your chuck roast in a crock pot and season with one packet of taco seasoning, apply to all sides of the roast. Top with the Momo’s sauce and a cubed up red onion (this is optional). Turn your slow cooker on low heat and cook for 8-10 hours until the meat is fork tender.Â
Remove the chuck roast from the slow cooker and shred with your hands or 2 forks in another bowl. Top with salt, the juice of a lime, and a couple spoonfuls of the remaining sauce in the slow cooker. You can also return the meat to the slow cooker.
Serve in a flour tortilla topped with pico de gallo and enjoy!Â
