Sunday Supper: momo's chilaquiles

Nothing hits quite like a plate of Chilaquiles after a long weekend!

Momo’s Chilaquiles

Ingredients

  • 1 ¾ cups Momo’s Michelada mix

  • Oil for frying

  • 3 corn tortillas 

  • 2 jalapenos 

  • ½ white onion

  • 2 cloves of garlic

For serving

  • Avocado

  • Fried eggs

  • Queso fresco

Directions

  • Cube the white onion and remove the skin, remove seeds and stim from the jalapenos, and remove the skin from the garlic. Add to a blender with Momo’s, salt, and pepper and blend to prep salsa. Set aside.

  • Cut the corn tortillas into chip sized pieces. Fry in oil for 45 seconds a side, remove and set on a baking sheet lined with paper towels. Add salt to taste. 

  • Heat a skillet over medium-high heat. Add the salsa to the skillet and cook for 2-3 minutes or let it come to a boil. Add chips and let cook for 1-2 minutes. Remove from heat, serve with fried eggs, queso fresco and avocado and enjoy!
