WHAT YOU NEED
Dressing
2 tbsp Momo’s Michelada mix
4 tbsp olive oil
1 tbsp honey
1 clove minced garlic
Dash of ground cumin
Salt
Pepper
Salad
1 head of romaine lettuce
2 ears of corn
4 Roma tomatoes
1 bell pepper (orange or red)
1 jalapeño pepper
¼ red onion
15 oz black beans
2 tbsp cotija cheese
Toppings
Cilantro
Cotija cheese
Tortilla strips
HOW IT'S DONE
Prep your dressing in a mason jar, add all ingredients and shake until consistent.
Cook the corn and black beans according to instructions. Wash and chop all salad ingredients.
Combine all salad ingredients in a bowl then shake the dressing one last time and add. Mix well then transfer to a serving plate or bowl.
Top with more cotija cheese, cilantro, and tortilla strips and enjoy! Serve this as a side, or add in chicken or beef and enjoy as a meal!
