Momo’s Huevos Rancheros
Ingredients
1 cup Momo’s Michelada mix
1 yellow onion
1 red bell pepper
1 jalapeño
2-3 cloves of garlic
1 lime
¼ cup half & half cream
¼ cup cilantro(and to garnish)
1 tbsp olive oil
Diced green chiles
Ground cumin
For serving
½ avocado
1 corn tortilla
Refried beans
Cotija cheese
1 fried egg
Directions
You can broil or smoke your peppers, I went with smoked. Start by washing your jalapeño and bell pepper. Cut your yellow onion into 1/4ths. Preheat your smoker to 350 degrees. Place the jalapeño, red bell pepper and yellow onion on the smoker and let cook for 30 minutes.
Remove from the smoker and let cool. Remove skin from the onion if you have not yet, deseed and remove the veins from the jalapeño and red bell pepper.
Add jalapeño, red bell pepper, yellow onion, garlic, Momo’s, lime juice, diced green chiles, cilantro, olive oil, salt, pepper and cream to a blender. Blend until smooth.
Heat up some refried beans, fry up one egg, and heat one corn tortilla for 30 seconds a side in some avocado oil.
Assemble your Huevos rancheros with 1 corn tortilla, a layer of refried beans, 1 fried egg, a couple spoonfuls of sauce, cotija cheese, a couple slices of avocado, and a couple leaves of cilantro!
