Momo's Tortilla Soup: A Sunday Supper Delight
Who knew a simple Michelada mix could elevate a classic dish to new heights? Our weekly collaboration with Chef Garrett has given us a recipe that's sure to become a new Sunday supper favorite: Momo's Tortilla Soup.
This hearty and flavorful soup is surprisingly easy to make, even for novice cooks. With a few simple ingredients and a handful of steps, you can have a warm and comforting bowl of soup in no time.
WHAT YOU NEED
½ cup Momo’s Michelada mixÂ
1 lb shredded chicken
2 cloves of garlic
2 Roma tomatoes
1 lime
32 oz chicken broth
14 oz can of black beans
14 oz can of corn(drained)Â
1 tsp chili powder
2 jalapeños
1 yellow onion
Salt
TOPPINGS
Avocado
Cheese
Tortilla strips
HOW IT'S DONE
Dice the yellow onion, mince garlic, and slice the jalapeños. Begin heating a large pot over medium heat and add olive oil. Add onion, garlic, and jalapeños and cook for 3-5 minutes until onions start to soften.
Dice up the tomatoes, removing the inside. Add Momo’s, corn, beans, chicken broth, lime juice, chili powder, tomatoes, and salt to the pot. Turn heat to high. Once it comes to a boil, turn to a simmer, cover and cook for 10-15 minutes. Stir occasionally.
Add shredded chicken, cover and cook for an additional 5 minutes.Â
Let cool then transfer to a bowl, top with cheese, tortilla strips, and avocado and enjoy!
